Things seem to be looking up for Mini Burger Truck. Sacramento's first food truck is expanding and quickly.

In response to an inquiry from Cowtown Eats, Mini Burger Truck's Davin Vculek revealed that they're adding not one (as reported yesterday by Bob Shallit in the Sac Bee - third item), but two more trucks.

"We have two trucks coming, one in somewhere around 5-6 weeks and another in the Spring. The one coming in about 6 weeks is another Mini Burger and yes we will be operating both 6 days a week."

Later in the e-mail, Vculek clarified that the truck opening in the Fall would be another Mini Burger Truck, but the truck in the Spring will be a different concept.

So Cowtown Eats readers. Many of you have visited other cities and tried their food truck. What type of food truck's missing from Sacramento?

Personally, I'm hoping for a crepes truck. I think it'd be a great addition to the scene and a space in the market that isn't occupied. What do you think? Leave it in the comments below.

While you're at it, don't forget to vote for Sacramento's Mini Burger Truck, Drewski's Hot Rod Kitchen and Wicked 'Wich in the Food Network search for America's Favorite Food Truck. Mini Burger Truck's up to No. 4, and Drewski's has climed the charts to No. 6. You can vote up to 10 times a day, every day.

How about a Hawaiian Plate Lunch Truck...beginning with two scoops rice, manapua (pork buns), and add a California style and flavor (i.e. make it a bit healhier..ha!)
